Bhel Puri
भेल पूरी
The definitive Indian chaat — a carnival of textures and flavours assembled in seconds on a newspaper cone at the beach or fairground. Bhel Puri is a cold tossed "salad" of puffed rice, thin fried noodles (sev), small crispy puris, boiled potato, raw onion, tomato, fresh coriander, and tamarind chutney, tossed together and eaten instantly before the puffed rice goes soggy. Born on the chowpatty beaches of Mumbai, Bhel Puri is the original fast food — assembled in 30 seconds flat by a skilled bhelwala who can serve a hundred people an hour with theatrical speed. The magic lies in the interplay of the light, airy puffed rice, the crunch of sev, the cool creamy potato, the sharp onion, and the sweet-sour-spicy chutneys. It is simultaneously crunchy, tangy, spicy, sweet, and utterly refreshing — the snack equivalent of a fireworks display.

Method
Prep all components: Boil, peel, and finely dice the potatoes. Finely chop the onion, tomato, coriander, and raw mango (if using). Measure out the puffed rice, sev, and crushed puris into separate bowls. Have both chutneys ready in squeeze bottles or small bowls. Everything must be prepped and ready before you toss, as the puffed rice goes soft within minutes of being dressed.
About 15 min
Toss and serve immediately: In a very large bowl, combine the puffed rice, half the sev, crushed puris, diced potato, onion, tomato, and coriander. Add the green chutney, tamarind chutney, lemon juice, chaat masala, and black salt. Toss everything together quickly and thoroughly. Taste — it should be tangy, spicy, and slightly sweet. Divide into newspaper cones or bowls immediately. Top with the remaining sev and raw mango (if using). Eat right away.
About 3 min
Tip: Bhel Puri must be assembled and eaten within 2-3 minutes. It is not a make-ahead dish — the puffed rice absorbs moisture and loses its magical crunch instantly.
