Korean Corn Dog (Gamja Hotdog)

한국 핫도그 / 감자 핫도그

The stretchy-cheese, golden-fried Korean street food sensation that dominated TikTok For You Pages worldwide. Unlike American corn dogs, the Korean version uses a chewy rice-flour batter, is rolled in sugar after frying, and comes loaded with options: half cheese half sausage, wrapped in crispy ramen noodles, coated in potato cubes, or filled entirely with mozzarella. First popularised by Myungrang Hot Dog in South Korea, these are now sold from food trucks across LA, New York, Toronto, and London. The cheese pull when you bite in is deeply satisfying and endlessly shareable.

Method

  1. Prep the skewers: Pat sausages and cheese sticks completely dry with paper towels (moisture prevents batter from sticking). Skewer each sausage lengthways on a long wooden or metal skewer, leaving a handle. For the iconic half-and-half style, skewer half a mozzarella stick followed by half a sausage on each skewer. Dust lightly with plain flour and shake off the excess — this helps the batter adhere.

    About 10 min

  2. Make the batter: In a deep mixing bowl, whisk together all-purpose flour, glutinous rice flour, sugar, baking powder, and salt. Make a well in the centre. Add the beaten egg and milk, and mix just until a thick, smooth batter forms — slightly thicker than American pancake batter. Do not overmix. Rest the batter for 10 minutes.

    About 5 min

  3. Set up your frying station: Heat the vegetable oil in a deep saucepan or wok to 175°C (345°F) — use a thermometer for accuracy. Set up a tray with panko breadcrumbs spread out, and a separate plate lined with paper towels. Also set up your rolling sugar on a plate.

    About 5 min

  4. Coat and fry: Pour the batter into a tall glass or deep cup for easy dipping. Dip a skewered sausage-cheese into the batter, turning and pulling upward so the batter coats evenly and thickly all around. Immediately roll in the panko breadcrumbs, pressing gently so they adhere fully. Carefully lower into the hot oil and fry for 4-5 minutes, turning occasionally, until deep golden brown all over. The batter should be crispy, not pale. Fry 1-2 at a time to maintain oil temperature. Drain briefly on paper towels.

    About 15 min

  5. The sugar finish (signature Korean step): While still hot, roll or sprinkle the fried corn dog generously in granulated sugar. This sweet-savoury contrast is key to the authentic Korean corn dog experience. Do not skip this step.

    About 2 min

  6. Serve immediately: Drizzle or dip with ketchup, yellow mustard, and sriracha mayo. Serve hot while the cheese is still molten and stretchy. When pulled apart, the cheese should create a dramatic pull — that's the money shot. Eat within 5 minutes for the best texture.
