Aloo Tikki Chaat (Crispy Potato Patty Chaat)

ਆਲੂ ਟਿੱਕੀ ਚਾਟ

Aloo Tikki Chaat is one of the most iconic North Indian street foods: crisp potato patties shallow-fried until golden, topped with warm spiced chole, sweet tamarind chutney, green chutney, yoghurt, onions, coriander, pomegranate, and crunchy sev. It balances hot-cold, crisp-soft, sweet-tangy-spicy in one plate and is a staple from Delhi to Amritsar food streets.

Method

  1. Mix mashed potatoes, cornflour, salt, red chilli, chaat masala, and coriander. Shape 8 thick discs. Chill 10 minutes to firm. This helps prevent breaking during frying and gives better crust development.

    About 15 min

Tip: A slightly dry potato mix gives the crispiest tikki. If the mix is wet, add 1-2 tbsp roasted besan or breadcrumbs.

  2. Heat a flat tawa with a thin layer of oil. Shallow-fry tikkis on medium heat 5-6 minutes per side until deep golden and crisp. Simultaneously warm seasoned chole in a separate pan.

    About 15 min

Tip: Do not move tikkis too early; let the first side set fully for a restaurant-style crust.

  3. Plate 2 hot tikkis per serving. Top with warm chole, yoghurt, tamarind chutney, green chutney, onions, sev, coriander, pomegranate, and a final sprinkle of chaat masala. Serve immediately.

    About 10 min

Tip: Layer hot and cold components at the last second to preserve crunch and temperature contrast.
