Döner Kebab

Döner Kebabı

The Döner Kebab — rotisserie-roasted meat shaved thin and served in a flatbread wrap — is one of the world's most beloved street foods. Its origins trace to 19th-century Bursa, Turkey, where Hacı İskender Efendi is credited with stacking seasoned lamb horizontally on a vertical spit around 1867 rather than horizontally as was traditional, creating the iconic cone of rotating meat. The technique spread globally: in Berlin from the 1970s with Turkish immigrant communities, where the modern "Dönerteller" (with flatbread, salad, and garlic yogurt) was codified and became Germany's de facto national street food. A proper döner uses a blend of lamb and beef, marinated in yogurt, garlic, cumin, coriander, and Aleppo pepper, then compressed into a vertical cylinder and slowly roasted so that the outside chars while the inside stays juicy. Shaved to order and stuffed into warm bread with garlic sauce, red cabbage, tomato, and chili, it is one of the greatest handheld meals ever invented.

Method

  1. Combine ground meat with yogurt, garlic, cumin, coriander, Aleppo pepper, paprika, and salt. Mix very thoroughly with your hands for 3 minutes — you want the mixture almost paste-like, with the fat and protein binding together. The yogurt tenderises the meat and adds moisture during cooking.

    About 8 min

Tip: Mix aggressively — the longer you work the mixture, the more cohesive and sliceable the final kebab will be.

  2. Form the meat into a large, tight loaf shape (about 20 cm long and 10 cm wide). Wrap tightly in cling film and refrigerate for at least 1 hour or overnight. This firms the mixture so it slices cleanly. When ready to cook, remove from film and place on a foil-lined baking tray.

    About 5 min

Tip: The rest is essential for structure. A rushed loaf will crumble when sliced.

  3. Roast in an oven preheated to 200°C (fan 180°C) for 25–30 minutes, turning once halfway, until deeply browned on the outside with an internal temperature of 74°C (165°F). Remove from oven and rest for 5 minutes.

    About 30 min

Tip: For extra char, finish for 3 minutes under the grill (broiler) after roasting.

  4. Slice the döner meat thinly against the grain using a sharp knife — long, thin shavings mimic the authentic vertical-spit technique.Warm the flatbreads in the oven (wrapped in foil) for 2 minutes while the meat rests.

    About 5 min

Tip: Paper-thin slices are the goal — they pick up the charred outer layer on every piece.

  5. Spread garlic yogurt generously over the warm flatbread. Layer shredded red cabbage, tomato slices, and parsley in the centre. Pile on the döner meat. Drizzle with more yogurt sauce and add chili sauce if desired. Fold the flatbread tightly and wrap in paper to serve.

    About 4 min

Tip: Layer in this order: sauce first (barrier), then vegetables (cushion), then meat (top). This prevents sogginess and structural collapse.
