Shawarma Cheesesteak Sandwich

The viral Philadelphia-Levant collision — a Philly cheesesteak made with shawarma-spiced beef (cumin, allspice, cinnamon, turmeric, coriander), caramelised onions and peppers, topped with melted provolone and the non-negotiable garlic toum sauce instead of Cheez Whiz. Wrapped in a hoagie roll.

Method

  1. Mix shawarma spices with oil. Toss sliced beef in the spice mix.

    About 5 min

  2. Sauté onion and pepper over high heat until caramelised (8–10 minutes). Push to side of pan.

    About 14 min

  3. Add beef in one layer; cook over very high heat, chopping and stirring, for 2–3 minutes until just cooked.

    About 14 min

  4. Mix meat with onion and pepper. Lay cheese slices on top; cover pan for 1 minute until melted.

    About 14 min

  5. Toast hoagie rolls. Spread toum on both halves. Fill generously with the cheesesteak. Add pickled chillies. The toum replaces Cheez Whiz — and it's transformative.
