Shish Taouk

Lebanon's beloved charcoal-grilled chicken skewer — chunks of boneless chicken thigh marinated in a lemon-garlic-yoghurt paste with seven spices (baharat) and sometimes ketchup for subtle sweetness, grilled until charred and juicy. Served in pita with toum.

Method

  1. Combine all marinade ingredients. Toss with chicken cubes. Marinate at least 4 hours, preferably overnight.

    About 5 min

  2. Thread onto metal skewers, not too tightly packed — the heat should reach all sides.

    About 11 min

  3. Grill over very hot charcoal or on the highest gas setting, turning every 2–3 minutes for 12–15 minutes total, until charred on the outside and cooked through.

    About 11 min

  4. Rest briefly. Serve on warm pita with generous toum, sliced tomatoes, pickled gherkins and parsley.

    About 11 min

  5. Alternatively, wrap in pita: spread toum on the bread, add shish taouk pieces, vegetables and roll tight.

    About 11 min

  6. Serve with chips/fries and a fresh fattoush salad.

    About 3 min
